Nutritious & delicious easy pikelets for Dad

Who doesn't love a nutritious and delicious pikelet or 5 for a breakfast treat!
⁠Here's some easy inspiration for the kiddies to treat Dad with tomorrow morning for Fathers Day. This one is a favourite from the lovely @nutritionbyginarose⁠

Healthy Little Pikelets

Ingredients:

2 bananas
2 eggs
1/2 cup oats
1 Tbsp psyllium 
1 teaspoon vanilla extract 
1 teaspoon cinnamon
1 teaspoon baking powder
squeeze lemon or ACV
pinch salt

Method:

  • Put all ingredients in a blender
  • *squeeze the lemon or ACV directly onto baking powder, it will fizz- this makes the pikelets light and fluffy. 
  • Heat a skillet on medium heat & fry pikelets in a little butter or coconut oil until golden on each side.
