RECIPE: Anytime Crumble

Who says you can't have fruit crumble any time of the day?

We couldn't go past this Anytime Crumble from Dr Cat Stone & Jessica Giljam-Brown. It's bound to be a crowd pleaser, packed with fibre, nourishing plant fats and vitamin C-rich fruit. We think this combination of fruit, oats, nuts and seeds deserves to be a meal you can enjoy any time of the day, and any day of the week!

Enjoy with coconut yoghurt for breakfast, eat cold as a snack, or as a traditional dessert.

Anytime Crumble

Serves: 8–10
Prep time: 15 minutes
Cook time: 45 minutes

Ingredients:

Fruit filling

2 cups mixed berries, fresh or frozen

3 apples, cored and cubed (peel if you like)

2 tablespoons chia seeds

3 tablespoons maple syrup

Juice of ½ a lemon

2 teaspoons vanilla extract

1 teaspoon cinnamon

Crumble

1 cup wholegrain oats

½ cup ground almonds

½ cup desiccated coconut

½ cup chopped mixed raw nuts (almonds, walnuts, pecans or hazelnuts work well)

¼ teaspoon nutmeg

1 teaspoon ground cinnamon

Pinch of Himalayan salt

¼ cup honey

¼ cup coconut oil

Method:

  • Preheat oven to 180ºC.
  • In an ovenproof serving dish combine the berries, apples, chia seeds, maple syrup, lemon juice and vanilla. Sprinkle over the cinnamon and then mix together to coat the fruit evenly.
  • In a large bowl mix together the oats, ground almonds, desiccated coconut, chopped nuts, nutmeg, cinnamon and salt.
  • In a small saucepan, melt together the honey and coconut oil then pour over the dry crumble mixture. Mix the dry and wet ingredients together with a wooden spoon until it looks like wet sand.
  • Spoon crumble over the fruit and bake for 35–45 minutes. The fruit should be soft and bubbling and the crumble golden brown.
  • Serve with Coconut Yoghurt
